Blue Springs Betty's to reopen with Kansas City Rib Co. barbecue

Terry Kopp of Kansas City Rib Co., leased the Blue Springs institution, Betty's Family Dining, in March.

It has been tied up in an estate. Still, Kopp put in new equipment and “spiffed” it up a bit.

He hopes to open later this month under Betty’s Family Restaurant/Kansas City Rib Co. with Betty’s signature giant pork tenderloins and colossal batter-dipped onion rings, fried chicken and Betty’s Burger Challenge (12 ½ pound patties and three pounds of French fries) that is free if customers eat it all within an hour.

The restaurant, at 1428 S.W. U.S. 40 highway, also will serve some of Kopp’s signature barbecue.

A 2007 Kansas City Star review called the fare: “high-quality products, lovingly smoked, rubbed, sliced and/or pulled…melt-in-the-mouth texture and deep smoky flavor.”

I too remember heading to Betty's before school..although it turned into an unofficial elective senior year for first period..

I grew up in Blue Springs and LOVED Betty's! My friends and I would go have her biscuts and gravy every Friday before school. Will they still serve breakfast and they're biscuts and gravy?

Free Financial Advice

BRB asks

Who do I talk to for financial advice that does not involve them trying to sell me something? We are 60 and 59, have a 200,000 annuity, are 60-70,000 credit card debt, have a house that is half paid for,own a condo in fl that is not paying for itself, have a good credit rating, not behind on anything, not facing foreclosure, wife on disability, husband still working, Want to pay off credit cards, but don't know how. Should we use part of annuity? I just want to know who to ask for help. Thanks

Answer:

It looks like you would be well served by a comprehensive financial plan which would address your concerns and give you a clear picture of where you are at financially. Financial advisors are paid in two different ways. Some receive commissions for the products they sell you. There are also fee only financial planners who work for you for a set fee and sell no products. In their case you know exactly how much it will cost you up front. It would also be preferable to use a financial planner who is a Certified Financial Planner.
